14 Carat Cake
MoM's famous Carrot Cake
Ingredients
2c. flour
2 tsp. baking powder
1-1/2 tsp.soda
2-3 tsp.cinnamon
2c. sugar or Splenda
1/2 - 3/4 c. salad oil
4 eggs
2c. finely grated carrots
1 20-oz. can crushed pineapple (unsweetened) drained
1/2 - 3/4 c. coconut
Combine flour, baking soda, salt and cinnamon. Add fructose or sugar, oil and eggs, mix well. Add carrots, pineapple, nuts and coconut and blend thoroughly. Pour into greased 9" x 13" pan or two round pans for layers. Bake at 350 degrees for 35 to 40 min. Frost with Cream Cheese Frosting when cake is cool.
