14 Carat Cake

MoM's famous Carrot Cake

 

 

Ingredients

  • 2c. flour

  • 2 tsp. baking powder

  • 1-1/2 tsp.soda

  • 2-3 tsp.cinnamon

  • 2c. sugar or Splenda

  • 1/2 - 3/4 c. salad oil

  • 4 eggs

  • 2c. finely grated carrots

  • 1 20-oz. can crushed pineapple (unsweetened) drained

  • 1/2 - 3/4 c. coconut

Combine flour, baking soda, salt and cinnamon. Add fructose or sugar, oil and eggs, mix well. Add carrots, pineapple, nuts and coconut and blend thoroughly. Pour into greased 9" x 13" pan or two round pans for layers. Bake at 350 degrees for 35 to 40 min. Frost with Cream Cheese Frosting when cake is cool.


Cream Cheese Frosting

 Ingredients

  • 1, 8oz. pkg. Cream Cheese (fat free works well too)

  • 2 tbs. soft margarine

  • 1 tbs. milk

  • 1/2 tsp. salt

  • 1 tsp. vanilla

  • 1 pound powdered sugar

In a large bowl combine all ingredients and beat gradually until all ingredients are mixed. If the mixture is too stiff, add a little milk, a few drops at a time. Makes enough frosting to frost two round layers or a    9" x 13" cake.
