Pumpkin Coconut Bread


Ingredients:

  • 1 1/3 c. oil

  • 5 eggs

  • 2 c. pumpkin


  • 2 c. flour

  • 2 c. sugar or Splenda

  • 1 t. salt

  • 1 t. cinnamon

  • 1 t. nutmeg

  • 1 t. baking soda

  • 2 (3-oz.) pkgs. sugarfree coconut pie filling

  • 1 c. chopped nuts

Instructions:

  • Beat together




  • Add, mixing until blended






  • Place into 2 greased bread pans and bake at 350 degrees for about 45-60 min.
