Ingredients:

3 chicken breasts, skinned

1 med.-sized ripe avocado, seeded, peeled and diced

2 T. fresh lime or lemon juice

salt and pepper
-
2 ripe tomatoes, diced

One onion cut in wedges

1 can olives, chopped
-
2 t. chopped fresh cilantro (optional)

1 cup alfalfa sprouts
-
1 T chopped fresh parsley
-
1/4 c. nonfat plain yogurt (optional)

Instructions:
Marinade chicken breasts in juice, salt, pepper, onion, cilantro and parsley, for 1 to 2 hours. Broil
or barbecue chicken and onions. Note: Barbecuing with mesquite briquettes turns out very
delicious.
While the chicken is cooking, prepare the other ingredients.
When chicken is done, take the meat off the bones and cut into bite size pieces. Combine all of the
ingredients in warmed pita bread (Cut a thin sliver from the top of each pita. Wrap pitas in foil and
warm in a 350 degrees F. oven for 15 min.) or flour tortillas. Add salsa to taste as desired.
