Ingredients and Instructions:
4 large ripe Mangos (not super ripe,
not mushy or fibery!)
3 tsp cinnamon, add more to taste
¾ cup brown sugar, add more to taste
1 Tblsp Cayenne Pepper, add more to taste (for more heat if desired!)
½ cup raisins
Note: the sauce will seem even hotter the next day in any leftovers since the
flavors have more time to marry up, take this into consideration when adding
more Cayenne if you are doing so.
Pears can also be put in to add a little more complexity (1 pear).

Cooking Directions:
Cut mango fruit meat into 3/8 to
½ inch sized cubes. Add all ingredients to a 3 or 4 quart saucepan and gently
mix. Low to med heat in a 3 to 4 qt saucepan for ~25+ minutes or until mangoes
are very soft, but NOT mushy or fibery.
Stir occasionally by turning the mixture over in the pan, do not swirl and
mash the mangos.
DO NOT add any liquids, the juices in the mangoes are more than enough and the
mixture will need to reduce somewhat so it is not too runny.
Do not cover the saucepan so that mixtures can reduce. |
